Meet Dr. Amy Yaroch from the Gretchen Swanson Center of Nutrition

Just recently, I had an opportunity to speak with Dr. Amy Yaroch, the Executive Director at the Gretchen Swanson Center for Nutrition, about her role as Executive Director and the role The Center of Nutrition plays in the Omaha food system and how the Center of Nutrition is connected to Food Day Omaha. 

As an independent non-profit nutrition center, which began in 1973, The Gretchen Swanson Center for Nutrition has been taking a new direction ever since Dr. Amy Yaroch began in March of 2009. A Different Kind of Bistro

Among the first things you notice at Sage Student Bistro is the staff's earnestness. Greeters, servers and cooks are all students in Metropolitan Community College's respected Institute for Culinary Arts, whose sleek building is the face of the Fort Omaha campus' south entrance.

This hidden dining gem occupies an intimate corner space just off the lobby. The contemporary, neo-industrial decor is accented by warm touches. Windows help open up the room and overlook the horticulture department greenhouse, the main supplier of Sage's locally-sourced produce. Some of that fresh goodness is grown in a herb garden surrounding a small, semi-secluded patio outside the bistro.

Crumbs: 2012 Omaha Hospitality Hall of Fame

The Omaha Hospitality Hall of Fame was created to recognize those who have given significant contributions to the hospitality industry in Omaha. Past inductees have had success as restaurant owners, chefs, food educators, food writers, purveyors and many other food related careers. Nominees into the Hall of Fame are put forth before a committee mostly comprised of past inductees and board members from the Omaha Restaurant Association. Once selected, new inductees are honored at a banquet and become one of the many faces on the Hall of Fame wall of inductees, which is located at the Institute of Culinary Arts, North Omaha campus.

Got Deer?

Venison, as deer is commonly referred to once it goes from pasture to plate, adorns the tables of two kinds of people – those who hunt and those who know someone who hunts. Sure it does end up on a restaurant menu from time to time, but it doesn’t reach most of the population, which is a shame because there is plenty venison to go around.
